Brian Collins - Executive Chef

Chef Brian Collins was born and raised in historic Bucks County, Pennsylvania where he gained an appreciation for classic American food by attending large family holiday parties.  Enchanted by the rhythm and flavors of the kitchen in his teenage years, he began working with several chefs in the area's historic restaurants.

He graduated from the prestigious Culinary Institute of America in Hyde Park, New York and became one of the youngest degreed chefs working in the Atlantic City casinos.  He then moved west, where he held chef positions at the Hyatt Regency Resort and Spa at Gainey Ranch (Scottsdale, Arizona) and the Marriott Laguna Cliffs Resorts and Spa (Dana Point, California).  Brian returned East to be the Executive Chef for the opening George Washington Hotel in Winchester, Virginia and the Director of Food and Beverage and Executive Chef at the Westin Tyson's Corner.

Joining Hollywood Casino at Charles Town Races in September 2009, Brian oversees all culinary operations and sets the direction of the culinary department.  "I enjoy experimenting with flavors, bringing out the best of high quality food and presenting it with flare."  Under his guidance, Hollywood has opened Final Cut Steakhouse, Zen Noodle and added a Pho Bar to the Epic Buffet.

Brian is an inductee of Chaine des Rotisseurs as a Chef Rotisseur and the Societe Mondiale du Vin.  He lives in Winchester, Virginia and is an avid soccer player.
